What's the difference between MD earphones and regular over-ear headphones?
I was thinking of buying well-reviewed cheap Bluetooth v5 wireless earphones, and a low latency transmitter... has anyone done this? would it work?

Yes, I have a set of August EP650 headphones that was part of a similar set I put together for my Racer 2...
My only complaint was that they were not particularly rain proof....
If you don't mind ear buds, Aukey EP-B80's sound good, are weatherproof and are the required low latency...they are currently available for £19:99 on eBay although I don't know anything about the seller...
Not sure which headphones you are looking at but they have to be low latency as well as the transmitter, and I would not buy anything that does not specifically mention it using "aptX Low Latency" as that's the fastest of the more commonly available standards...A lot of headphones advertise as being Low Latency but are not actually aptX LL so end up being laggy ....
